Genuine Denominazione di Origine Protetta (Protected Designation of Origin) sheep's milk Pecorino from Cooperativa Allevatori Ovini (Sheep Breeders Cooperative) in Oritani, Sardinia, this tangy and savory cheese has been a favorite in Italy and around the world for centuries. Retailing for over $30/lb in the US, this 16.5lb block is vacuum-sealed and has spent all of its life either in a freezer or a refrigerator. I got it from a food supplier closeout last year, but have realized there's no way I'm every going to need this much cheese.
