The Commissary Kitchen Captain is a full-time position on the Pixie Scout Culinary Team, responsible for working a culinary station at the commissary, as well as fulfilling additional duties, including but not limited to weekend leadership, to ensure the smooth operation of the kitchen services.
A qualified Kitchen Captain is a skilled cook and effective communicator, confidently knowledgeable in food safety practices. They are able to manage their time and workflow such that they can execute their station and fulfill the duties specific to the Kitchen Captain, all while in frequent communication with Operations + Culinary Leads, additional Kitchen Captains, and the full Culinary team.
Duties include:
-Executing the duties of their assigned station, including the management of inventory + mise related to that station (Kitchen Captain will be expected to pick up additional tasks as needed to help fill in for a temporary absence of Culinary production team members).
-Assuming responsibility over the weekends for the completion of prep tasks and timely assembly of orders. This includes communicating timeframes and production needs to the rest of the culinary production team
-Assuming operational responsibilities over the weekends including but not limited to correctly packing orders, sending fulfillment notifications via Squarespace, and coordinating delivery with weekend drivers.
-Ensuring that food safety and cleanliness checklists are followed by the team, particularly when Culinary and Operations leads are not present (holding a qualifying certificate in food protection from the NYC DOHMH is required).
-Closely studying the inspection response plan for the commissary, and in the event of an inspection, assisting Operations and Culinary leads in quickly and effectively executing the plan.
-Assisting Culinary and Operations leads and FIR team in keeping kitchen, walk-in, and storage spaces clean and organized.
-Coordinating and communicating with other members of the culinary production team to ensure that each station effectively makes use of shared resources (oven schedule, shared food product, etc.)
-Coordinating and communicating with Culinary and Operations leads throughout the work day.
-Attending menu meetings as needed to support the planning and execution of upcoming products (Kitchen Captain will be expected to be apprised of current and upcoming menus across all food products, in order to support the requisitioning and receiving of product.)
-Assessing onsite food product weekly to assist Culinary and Operations leads in coordinating the production of donation meals.
Some additional weekly inventories and checklists to assist Operations and Culinary leads in daily operations tasks (inventories, pars, etc.)
Job requirements for either Captainship:
-6+ years of professional culinary experience
-A desire to learn and grow as a professional cook
-Must work a Full-Time schedule (8-hour shifts no earlier than 7 AM and no later than 6 PM, Thursday - Monday, 40 hours per week)
-Understanding of and adherence to NYC DOHMH standards and policies, NYC Food Protection Certificate required
-Able to stand for at least 8 hours and complete tasks that may require lifting up to 50 lbs.
-Able to read and understand inventories and checklists formatted in Google Sheets
-Able to coordinate professionally with other members of the food service team as well as managers using company communication platforms and tools.
-Spanish language proficiency is required for this position.
Job details for either Captainship:
-Full-Time position (8-hour shifts no earlier than 7 AM and no later than 6 PM, Thursday - Monday, 40 hours per week)
-Starting pay: $26.44 per hour
-Accrued Safe + Sick Leave (PSL), 1 hour for every 30 hours worked
